摘要: 乳制品食品安全问题仍然是群众关心的热点问题,其中化学污染物是影响乳制品食品质量安全的重要危害因子之一。为了保障乳制品的质量,乳制品中化学污染物的检测方法也成为了各国研究热点。建立乳制品中化学污染物分析与检测新方法、新技术,加大监管力度,提高乳制品生产企业质量意识,是保证乳制品食品安全、保障群众身体健康的关键。本文针对乳制品中化学污染物的分类和危害、各乳制品易发生的化学污染物类型与防控手段以及检测方法进行简要综述。

Abstract: The safety problem of dairy products is still a hot issue of concern to the general public, and chemical pollutants are an important hazardous factor for the quality and safety of dairy products. In order to guarantee the quality of dairy products, methods for the detection of chemical pollutants in dairy products has become a research hotspot in various countries. Developing new methods and techniques for the analysis and detection of chemical pollutants in dairy products, strengthening supervision, and raising dairy companies’ awareness of product quality are the key to ensuring the safety of dairy products to protect the health of consumers. In this paper, the classification and harms of chemical pollutants in dairy products, and the types of and the prevention and control approaches against chemical pollutants that commonly occur in dairy products are briefly reviewed.
