摘要: 香兰素是目前食品行业应用较为广泛的香料之一。本文论述香兰素在食品行业中的应用现状、国内外的使用限量要求、生产工艺特点以及在食品中可能带入的风险,重点汇总分析乳制品、婴幼儿配方食品和特殊医学用途婴儿配方食品中香兰素检测方法的研究进展,包括气相色谱法、液相色谱法、气相色谱-串联质谱法、液相色谱-串联质谱法、光谱法等多种方法,探讨不同检测方法各自的优势和局限性,为特殊医学用途婴儿配方食品中香兰素的科学检测和深入研究提供依据。

Abstract: Vanillin is a flavor widely used in the food industry. This paper discusses the application of vanillin in the food industry, worldwide limits for the use of vanillin, the characteristics of the production technology and the possible risks brought by vanillin for foods, and it also summarizes the methods for vanillin detection in dairy products, infant formulas and formulas for special medical purposes intended for infants including gas chromatography (GC), liquid chromatography (LC), gas chromatography-tandem mass spectrometry (GC-MS/MS), liquid chromatography-tandem mass spectrometry (LC-MS/MS), and spectroscopy with special attention to their advantages and limitations. This review is expected to provide a basis for the detection and further research of vanillin in infant formulas for special medical purpose.
