Abstract: Bioactive peptides refer to protein fragments that can serve as functional components while providing nutritional and functional value to the body. Cow’s milk has become a source of various bioactive peptides. Both classical methods and bioinformatics approaches can be used to prepare bioactive peptides. Milk-derived peptides with bioactivities such as antihypertensive, antimicrobial, antidiabetic, and cell-regulating effects have been identified. These bioactive peptides can be applied as nutraceuticals in commercial products and as nutritional supplements in the food industry. This article reviews the preparation methods, functions, sources, and commercial uses of milk-derived bioactive peptides, aiming to provide a reference for their development and application.

摘要: 生物活性肽是指可作为功能成分并为机体提供营养和功能价值的蛋白质片段。牛乳已成为多种生物活性肽的来源,经典方法和生物信息学方法均可制备乳源生物活性肽。已鉴定出乳源生物活性肽具有降血压、抗菌、抗糖尿病、调节细胞等活性,可作为营养保健品应用于商业产品,或作为营养补充剂应用于食品工业中。本文综述乳源生物活性肽的制备方法、功能、来源及商业用途,以期为乳源生物活性肽的发展和应用提供参考。
