摘要： β-乳球蛋白（β-lactoglobulin，BLG）是牛乳中的主要过敏原，可引起严重过敏反应，通过阿魏酸（ferulic acid，FA）协同二十二碳六烯酸（docosahexaenoic acid，DHA）修饰BLG构建三元复合物，探究对其抗原性和结构特性的影响。采用非共价结合方式获得BLG-DHA-FA复合物，通过多光谱技术、分子对接技术和间接竞争酶联免疫吸附测定法对复合物进行结构表征和抗原性研究。结果表明，FA与BLG-DHA结合后改变了芳香族氨基酸的微环境，极性增强；FA、DHA通过疏水相互作用及氢键结合于BLG的疏水空腔内，并使BLG的二级结构改变，β-折叠和无规卷曲减少，β-转角增加；与BLG、BLG-DHA相比，加入FA可显著降低抗原性，当FA质量浓度为0.08 mg/mL时免疫球蛋白G结合能力抑制率最高，达到40%。
