摘要： 特种乳作为乳制品工业的重要组成部分，富含蛋白质、乳糖及矿物质等多种营养成分。随着不同特种乳的营养组成及其功能特性被逐渐探明，特种乳及其制品越来越受到消费者的青睐。本文综述并比较6 种特种乳（牦牛乳、水牛乳、羊乳、驼乳、马乳及驴乳）的营养组成及含量差异，并对不同特种乳中的功能因子在增强免疫、抗氧化、抗菌等方面的功能特性进行阐释。此外，基于特种乳特有的营养成分和功能特性探讨其在功能性乳粉、发酵乳制品和奶酪等产品加工技术方面的发展现状、机遇与挑战，以期丰富乳制品种类，推动我国特种乳的协同发展，为特种乳资源的高值化利用及个性化功能乳制品开发提供理论依据。
