燕麦粉、大麦若叶粉复合酸乳配方 优化及品质分析

Formulation Optimization and Quality Analysis of Oat-Barley Grass Powder Composite Yogurt

摘要: 以大麦若叶粉和燕麦粉为主要原料,添加大豆分离蛋白(soy protein isolate,SPI)粉、蔗糖和乳酸菌等配 料共同发酵,研制燕麦粉、大麦若叶粉复合酸乳。通过单因素试验和正交试验分别探究大麦若叶粉添加量、燕麦 粉与水的料液比、发酵剂添加量和SPI添加量对燕麦粉、大麦若叶粉复合酸乳酸度及感官评分的影响,确定较优发 酵工艺条件,并对燕麦粉、大麦若叶粉复合酸乳理化指标、微生物指标、持水力、质构特性、活性成分及抗氧化 能力进行测定。结果表明:在大麦若叶粉添加量1.5%、燕麦粉与水的料液比1∶14(g/mL)、发酵剂添加量0.2%、 SPI添加量1.5%条件下,燕麦粉、大麦若叶粉复合酸乳感官评分为92.82、酸度为73.25 °T、pH值为4.38、持水力为 68.42%、乳酸菌活菌数为3.15×107 CFU/g、总黄酮含量为46.3 mg/100 g、总酚含量为81.2 mg/100 g、1,1-二苯基-2-三 硝基苯肼自由基清除率为76.2%、羟自由基清除率为74.5%、铁离子还原抗氧化能力为71.5 mmol/L,产品组织状态均 匀、口感顺滑细腻、风味协调、无悬浊颗粒,且具有大麦若叶与燕麦特有风味,各品质指标均符合相关国家标准。

Abstract: Plant-based yogurt, fermented by a lactic acid bacterial starter culture, was developed from barley grass powder and oat powder as the main raw materials, supplemented with soy protein isolate (SPI) and sucrose. Single-factor and orthogonal array experiments were conducted to investigate the effects of barley grass powder addition, oat powder-to-water ratio, starter culture addition, and SPI addition on the acidity and sensory score of the yogurt, and the optimal formulation was determined. The physicochemical and microbiological parameters, water-holding capacity, texture properties, bioactive constituents and antioxidant capacity were measured. The results showed that under the optimal conditions of 1.5% barley grass powder addition, 1:14 (g/mL) oat powder-to-water ratio, 0.2% starter culture addition, and 1.5% SPI addition, the yogurt exhibited a sensory score of 92.82, acidity of 73.25 °T, pH value of 4.38, water-holding capacity of 68.42%, viable bacterial count of 3.15 × 107 CFU/g, total flavonoid content of 46.3 mg/100 g, total phenol content of 81.2 mg/100 g, 1,1-diphenyl-2-picrylhydrazyl radical scavenging rate of 76.2%, hydroxyl radical scavenging rate of 74.5%, and ferric reducing antioxidant power of 71.5 mmol/L. The product demonstrated a uniform texture, smooth and delicate mouthfeel, harmonious flavor, and no suspended particles, and possessed the distinctive flavors of barley grass and oats. All quality indices complied with the relevant national standards.
