乳清分离蛋白/细菌纤维素纳米纤维稳定的精油纳米乳液在枇杷保鲜中的应用

Application of Whey Protein Isolate/Bacterial Cellulose Nanofiber-Stabilized Essential Oil Nanoemulsion in Loquat Preservation

摘要: 本文为研究精油纳米乳液对枇杷贮藏期的影响,以乳清分离蛋白/细菌纤维素纳米纤维(WPI/BCNFs)作为复合乳化剂,青花椒精油(ZSEO)与肉桂醛(CA)作为复合油相,乳化制得水包油(O/W)型纳米乳液。通过仪器分析、Zeta电位、粒径等方法对纳米乳液的状态和性能表征进行测定,并探究了不同ZSEO/CA复配比对制得乳液的性能与稳定性的影响。结果表明,ZSEO与CA质量比为7:1的纳米乳液涂膜可以显著抑制枇杷的质量损失率和腐烂率的上升,延缓其可滴定酸、可溶性固形物和硬度的下降,可较好地延缓枇杷采后的品质劣变,延长采后新鲜枇杷的货架期。此研究为植物复方精油纳米乳液涂抹保鲜技术在果蔬的应用中提供了有力依据。

Abstract: In this paper, in order to investigate the effect of essential oil nanoemulsions on the storage period of loquat, whey isolate protein/bacterial cellulose nanofibers (WPI/BCNFs) were used as the complex emulsifiers, and Zanthoxylum schinifolium essential oil (ZSEO) and cinnamaldehyde (CA) were used as the complex oil phase, and the oil-in-water (O/W) nanoemulsions were produced by emulsification. The state and performance characterization of the nanoemulsions were determined by instrumental analysis, zeta potential, and particle size, and the effects of different ZSEO/CA complex ratios on the performance and stability of the produced emulsions were investigated. The results showed that the nanoemulsion-based coating at a ZSEO-to-CA mass ratio of 7:1 could significantly inhibit the increase of loquat’s mass loss rate and decay rate, delay the decrease of its titratable acid, total soluble solid and hardness, which could better delay the quality deterioration and prolong the shelf-life of fresh loquat after harvest. This study provides a strong basis for the application of plant-based compound essential oil nanoemulsion coating preservation technology in fruits and vegetables.
