Abstract: The main task of Food Codex Alimentarius Commission (CAC) is to formulate worldwide coordinated standards, the structure of which system is clear, including horizontally general principle and vertically specific commodity standards. The milk and milk-related CAC standards, as well as their current situation and characteristics, were analyzed in this study. They are widely covered, highly used, well arranged and established referring to the most scientific risk analysis methods. They are also rigorously and professionally formulated and fast revised and updated according to the latest international situation.

摘要: 食品法典委员会(CAC)的主要工作是制定世界范围内协调一致的标准,CAC标准体系结构清晰,分为横向通用原则标准和纵向特定商品标准。本文通过整理CAC乳与乳制品相关标准,分析CAC乳与乳制品标准体系的现状及特点。CAC乳与乳制品标准覆盖范围广、利用程度高,标准体系结构层次清晰,标准的制定依据最为科学的风险分析方法,制定过程严谨、专业,修订及时迅速并且把握国际动态。
