Isolation and Identification of Lactic Acid Bacteria from Traditional Paraguayan Fermented Milk

巴拉圭地区传统发酵乳制品中乳酸菌的分离鉴定

Abstract: In order to enrich the resource of lactic acid bacteria and to systematically clarify the diversity of lactic acid bacteria in traditional Paraguayan fermented dairy products, lactic acid bacterial strains were isolated, purified and identified from traditional Paraguayan fermented milk by combined use of the traditional pure culture method, 16S rRNA gene sequencing and phylogenetic analysis. A total of 79 strains were isolated from eight samples, which were identified to belong to seven species of four genera. Lactococcus lactis was found to be the dominant strain, accounting for 68.35% of the total isolates.

摘要: 为获得更加丰富的乳酸菌资源,系统研究巴拉圭地区传统乳制品中乳酸菌的生物多样性,采用传统纯培养方法结合16S rRNA基因序列分析技术和系统发育进化关系分析技术对巴拉圭地区传统乳制品中乳酸菌进行分离纯化和种属鉴定。结果表明,来自巴拉圭地区的8 份传统乳制品中共分离得到79 株乳酸菌,分属于4 个属、7 个种,其中乳酸乳球菌(Lactococcus lactis)为巴拉圭地区传统发酵乳中的优势菌种,占总分离菌株的68.35%。
