Abstract: As an enzyme that catalyzes the transfer of acyl groups, transglutaminase is widely used in the dairy industry. This paper briefly describes the source and catalytic mechanism of the enzyme, and further explains the mechanism of action of the enzyme on milk proteins, including casein, whey protein and milk protein products. Moreover, the application of the enzyme in the dairy industry is summarized in this paper.

摘要: 转谷氨酰胺酶是一种催化酰基转移的酶,在乳品工业中应用较广。本文简述了该酶的来源、催化机理等,进一步阐释了该酶对乳蛋白的作用机理,包括其对酪蛋白、乳清蛋白及乳蛋白产品的影响,并在此基础上对该酶在乳品工业中的应用进展进行了总结。
