Abstract: In this paper, we reports on the recent progress and a comparison of analytical techniques for protein in milk and dairy products. This paper may be helpful to select appropriate techniques for protein analysis of different samples.

摘要: 总结乳与乳制品中蛋白质的检测评价方法,对各种方法的研究进展情况进行了综述,并且分析比较了各种方法的优缺点,以便于食品检测人员能够更好地针对不同的样品选择合适的蛋白质检测方法.
