摘要: 货架期对灭菌乳来说是一个非常重要的参数,然而目前缺少快速预判货架期内稳定性的方法.通过应用TURBISCAN稳定性分析仪分析灭菌乳样品,建立了一种快速检测灭菌乳稳定性的分析方法.结果表明:24 h内,当样品稳定动力学参数小于1.5时,保质期内稳定性预后较好,反之,则灭菌乳存在脂肪上浮严重的风险.经验证,该方法可以较好的评估货架期.
