Detection of Changes in Volatile Organic Compounds of Infant Formula Milk Powder during Storage by Fast Gas Chromatography Electronic Nose

快速气相电子鼻分析婴儿配方乳粉贮藏期间挥发性有机物变化

Abstract: The volatile organic compounds (VOCs) of infant formula milk powder stored for different periods of time at different temperatures were identified using Heracles Ⅱ fast gas chromatography electronic nose based on comparison of Kovat retention index with AroChemBase. Principal component analysis (PCA) was carried out on the characteristic peaks. Results indicated that the main VOCs of infant formula milk powder were aldehydes, ketones and alcohols. PCA could clearly distinguish different storage periods of infant formula milk powder, and less significant differences in VOCs were found with shorter storage intervals. Stronger off-flavor appeared with increasing storage time. Accordingly, Heracles Ⅱ fast gas chromatography electronic nose was useful for rapid detection of VOCs and odor compounds in infant formula milk powder.

摘要: 利用HeraclesⅡ快速气相电子鼻技术对不同贮藏温度、不同贮藏时间的婴儿配方乳粉中的挥发性有机物(volatile organic compounds,VOCs)信息进行采集,并结合Kovat保留指数和AroChemBase数据库对VOCs进行定性分析,采用主成分分析(principal component analysis,PCA)法对特征色谱峰进行分析。结果表明:婴儿配方乳粉贮藏过程中主要的VOCs为醛、酮、醇类物质;PCA模型可以明显区分不同贮藏期的婴儿配方乳粉,且贮藏时间越近的样品其VOCs差异性越小;贮藏期越长,婴儿配方乳粉的异味表现越突出。上述结果表明,HeraclesⅡ快速气相电子鼻可以应用于不同贮藏期婴儿配方乳粉中VOCs的快速检测、气味分析及质量监测。
