乳中生物活性肽对人体健康影响的研究进展

Abstract: In recent years, significant progress has been made in the study of bioactive peptides (BAP) derived from milk proteins and their functions owing to the rapid development of modern separation and purification technology and functional monomics. An increasing number of BAPs have been discovered and recognized as a potential ingredient for next-generation functional dairy foods for their health benefits. As dairy processing will develop toward refinement and functionalization in the future, milk-derived BAPs will certainly be sought after by researchers for the development of new dairy products. This article reviews recent studies on milk-derived BAPs and their health-promoting properties such as immunoregulatory, antihypertensive, hypolipidemic, antioxidant and antibacterial effects, aiming to provide valuable information for further research and development of milk-derived BAPs.

摘要: 随着现代分离纯化、功能组学技术的快速发展,近年来国内外对乳中生物活性肽(bioactive peptides,BAP)及其生物学功能的研究取得了重要进展,越来越多的乳中BAP及其对人体健康的功效被认识和理解,BAP被认为是下一代乳品功能食品的潜在添加成分。随着未来乳品加工向着精细化、功能化方向发展,乳中BAP必将成为乳品新产品研发的宠儿。本文对近年来研究中的乳中BAP及其免疫调节、降血压、降血脂、抗氧化和抗菌等功效进行综述,旨在为进一步深入研究和开发乳中BAP产品和工艺提供参考。
